Popping Pasta Salad


Prepare time: 10 min Cook: 10 min Ready in: 20 min  

Perfect for lunch boxes or a pre made dinner when rushing home!


  • 1 cup of fusilli pasta
  • 1/4 cup cucumber
  • 1 cup cherry tomatoes
  • 1 cup mozzarella (can be cut up or pearls)
  • 1/4 cup Sweetcorn  (one small can)
  • 3 table spoons extra virgin olive oil
  • 1 table spoon balsamic vinegar
  • 1 tea spoon pesto


1In a small saucepan, bring water to the boil and then add the pasta till just cooked.

2Meanwhile, cut the tomatoes into half and the cucumber up into 1/4s.

3Drain the cooked pasta and add the halved tomatoes, cook on for 3 mins. 

4Take the pan off the heat and place contense  into a bowl and adding the cucumber, and sweetcorn. 

5Mix the olive oil, balsamic and pesto in a jam jar and shake well to combine. This can be done with a folk in a bowl but my not get the same consistency.

6Dress the salad and with the dressing and serve strait away or refrigerate until needed.
