60ml. extra-virgin olive oil
Juice of 1 lime
1/4 tsp. cumin
3 avocados, cubed
140g cherry tomatoes, halved
1 small cucumber, sliced into half moons
1 tin corn
2 tbsp. chopped cilantro
1In a small bowl, whisk together oil, lime and lemon juice, and cumin and Season with salt.
2In a large serving bowl, combine avocados, tomatoes, cucumber, corn, and cilantro. Gently toss with dressing and serve immediately.
