This fun-filled recipe is so much fun on a rainy day. why not try making you gingerbread men into fun seasonal characters and putting on a show.

  • 175g butter room temperature
  • 175g dark muscovado sugar
  • 250g self-raising flour
  • 100g golden syrup
  • 1 level tbsp ground ginger
  • 4 medium eggs
  • Stem or crystallized ginger, to decorate
  • For The Icing and extra decoration:
  • 100g fondant icing sugar\
  • Mini smarties
  • Sprinkles
  • preheat your oven to 190c
  • Tip the butter into a bowl and add the sugar, flour, syrup, ginger, and eggs, and beat the mixture until smooth. Once the mixture is combined roll out the dough till 0.5cm thick and cut into desired shapes.
  • Place the shapes on a flat tray lined with baking paper and bake in the center of the oven for 30-40 mins, or until just firm to the touch in the center.
  • Remove from the oven and leave to cool for 10 mins. Transfer to a wire rack to cool completely.
  • To make the icing: Mix the fondant icing sugar with enough water to give a soft consistency gooey consistency. Decorate with gingerbread with icing and any extra decorations. Leave the icing to set before serving.
