A fun recipe for all the family! Perfect paired with flufffy rice, recipe found in top tips).

Ingredients

  • 200g Turkey
  • 1 Onion
  • 4 Baby corn
  • 100g broccoli
  • 1cm cube ginger
  • 1 tsp dried coriander
  • 1tsp mild curry powder
  • 50ml chicken stock
  • 1 regular can coconut milk
  • 1 mango
  • 150g long grain rice

Directions

1Cut the turkey into 2cm cubes and set to one side.

2Chop the onions, baby corn and broccoli up small and add to a pan with oil.

3Cook over a gentle heat for 3-5 mins, or until the onions are soft and you are able to pusht a folk through the veg.

4Great the ginger and add to pan with turkey, coriander and spices and fry over a medium heat for 5 mins, untill the turkey startes to brown.

5Add the chicken stock coconut milk and mango and simmer for 20 mins or untill the sauce is thick and the turkey is cooked through.

6Cook the rice as suggested in top tips, serve and engoy!
