Ingredients

  • 1 chicken fillet, cut into small pieces
  • 1 pint of chicken stock
  • 1 medium sweet potato, peeled and diced
  • 1 medium carrot, peeled and grated
  • 1/2 red onion, peeled and diced

Method

  1. Bring the chicken stock to the boil and add all the ingredients.
  2. Bring back to the boil and cook until you are able to mash the veggies with the back of a fork and the chicken is cooked all the way trough.
  3. Add extra boiling water if needed.
  4. Remove from heat and blend till smooth.
